Chef Kevin Cherkas, always loyal to his cause, continues to cheer on local produce in these new additions and set his sights on bringing the timeless classics like Caesar salad to Cuca’s tables. “I really wanted to play with the idea of recognised classics”, Kevin laughs, “to take such a revered dish and rework it seemed too good a challenge to pass up!” Instead of using the traditional ingredients, Kevin opted to reinvent the experience of a Caesar through texture, playing with the traditional form and taste of the salad to offer a truly unique interpretation named “Broccoli Caesar” with charred broccoli, whipped coconut and salted fish crumble.
With the new “Turkish Meatballs”, Cuca has taken an inspirational trip to the Middle East by evoking memories of home cooking, of food prepared with real soul and brought up to date with a healthy dose of Cuca creative flair. Lots of thought and technique go as well into “Snow White”, the new dessert in the menu: a triple tier frozen yoghurt cake on a shortbread base packs a hidden surprise inside. Crack open the yoghurt shell and a cascade of poached strawberries infused with mint are revealed.
